Last Weekly Note:
This is the last Weekly Note of the school year. The staff of Liberty School wishes everyone a wonderful summer and looks forward to seeing everyone refreshed and relaxed in August, ready for the new school year.

Summer Library:
We are happy to announce that Ms. Finch will be taking over as librarian, following Mrs. Ely's retirement. Ms. Finch will continue to offer summer library hours for students and families who are interested. The Liberty School Library will be open every Wednesday from 10 am to 2 pm throughout the summer. Any books checked out need to be returned on or before the first day of school, August 19th.

Pumpkin Planting:
Students planted pumpkin plants yesterday at our property on Jewett Road. We will return in October to pick the pumpkins and have a Harvest Festival. Yesterday, the students had pumpkin chocolate chip muffins as a snack, and there were many requests for the recipe. Here it is:
Rachel’s Pumpkin Muffins
From the Café Beaujolais cookbook
Preheat oven to 350 degrees.
Mix together:
• 2 c. brown sugar
• 1 c. corn oil (I use ½ applesauce, ½ oil)
• 4 eggs, beaten
• 1 lb canned pumpkin (about 2 c pureed)
Sift together in a separate bowl:
• 3-1/2 c. flour
• 2 tsp baking soda
• 2 tsp salt
• 1 tsp baking powder
• 1 tsp nutmeg
• 1 tsp allspice
• 1 tsp cinnamon
• ½ tsp powdered cloves
Add dry ingredients to wet, alternating with:
• 2/3 c. water
Stir in:
• ½ c. chopped walnuts (I use chocolate chips instead)
• ½ c. raisins (I use chocolate chips instead)
Place muffin papers in muffin tins, and fill 2/3 c. full. Bake at 350 degrees for 25-30 minutes.
